The first light of morning at Josef begins in the bakery. Before dawn, our team of four bakers arrive and quietly begin their craft — filling ovens with croissants, baguettes, and pastries. By the time breakfast opens at 6:30, trays of golden layers fill the room with warmth and the unmistakable scent of fresh bread.


Flour, sugar, yeast, and expertise
Our bakery is part of Josef’s story. Almost fifteen years ago, the idea was simple yet ambitious: to create an in-house bakery where everything could be made fresh, with patience and care. A French master baker led the first team, teaching us the secrets of croissant layering, the silkiness of macaron cream, and the foundations of experimentation that still guide us today.



Our signature bread
Every bakery has its secrets; ours is a sourdough that was born and raised here at Josef. Flour, water, salt, and a starter — simple ingredients given life through years of daily care.
Born from the desire to create a bread unique to Josef, this sourdough has grown into our signature — a loaf with a crackling crust, a tangy depth, and a character as distinctive as the hotel itself.
Every loaf is baked fresh in the morning, using flour imported from France and high-quality Czech butter.

In search of croissant perfection
Only a small batch of croissants leave our ovens each day — never mass-produced, always at their peak.
Croissants, pains au chocolat, and macarons demand patience, precision, and time. From the choice of flour to the quiet rhythm of folding and laminating dough, each step is deliberate.
Butter melts into layers, air and texture form slowly, and the aroma that fills the room signals perfection — crisp on the outside, soft within.

Handmade, every day
Everything at the Josef bakery is handmade, in small quantities, with the time and attention it deserves. Each week, new flavors arrive so we’re always serving something in-season.
For those booking directly with us, one welcome gift option is a sweet selection of our three specialties: a macaron, a chocolate, and a miniature cake.

Breakfast is just the beginning. From 10 am to 3 pm, EVA's serves croissants, pains au chocolat, and seasonal creations, best paired with coffee, matcha, or tea.
Neighbors come for our sourdough loaves — one of our best-kept secrets — and often leave with more: gluten-free almond cake inspired by the Spanish Camino de Santiago, moist banana bread, our signature apricot-filled cookie, or a slice of marbled bábovka.
We focus on local ingredients from local suppliers.
